Why wont my 8 month old baby eat stage 2 foods? - organic finger foods

Hello, my son is almost 8 months. I most of her life myself. If we are away from home I feed Hipp Organic Stage 1 bottle. (practical for the move)
I have tried to encourage increasingly bulky food to chew, but if I did not care that the bits that are sick, has to eat.
He will eat finger foods, only have problems with the chunkier baby foods.
Can anyone help?
